Apple Cheddar Quesadillas

4 large flour tortillas

2 cups sharp cheddar cheese, grated

1 large apple (such as Granny Smith or Honeycrisp), cored and thinly sliced

1 tablespoon butter

1 tablespoon honey (optional, for drizzling)

1 teaspoon ground cinnamon (optional, for added flavor)

Fresh arugula or spinach (for serving, optional)

Preheat the Skillet: Begin by heating a non-stick skillet over medium heat until it’s warm but not smoking.

    Prepare the Cheese Filling: In a medium-sized bowl, mix the grated sharp cheddar cheese with the optional ground cinnamon for an extra flavor kick. Set this mixture aside for assembly.

      Assemble the Quesadilla: Place one tortilla on the heated skillet. On one half of the tortilla, sprinkle a generous portion of the cheese mixture. Layer the thin apple slices evenly over the cheese, then add a bit more cheese on top to help everything bind together. Carefully fold the other half of the tortilla over the filling to form a half-moon shape.

        Cook the Quesadilla: Allow the quesadilla to cook for about 3-4 minutes, or until the bottom is golden brown and the cheese begins to melt. Using a spatula, flip the quesadilla gently and cook for an additional 3-4 minutes until the other side is also golden and crispy.

          Repeat the Process: Once the first quesadilla is cooked, remove it from the skillet and set it aside. Continue this process with the remaining tortillas and filling. If the skillet starts to dry out, add a bit of butter before cooking each new quesadilla.

            Cut and Serve: Once all the quesadillas are cooked, use a sharp knife to cut them into wedges. Arrange the wedges on a serving plate and, if desired, drizzle with honey for a touch of sweetness. Serve with fresh arugula or spinach on the side for a refreshing contrast.
