8 oz elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 teaspoon mustard powder

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon cayenne pepper (optional)

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

Salt and black pepper to taste

1/2 cup breadcrumbs (optional for topping)

Fresh parsley, chopped for garnish

Cook the Macaroni: In a large pot, bring a generous amount of salted water to a rolling boil. Add the elbow macaroni and cook according to the package instructions, usually about 7-8 minutes, until it reaches al dente texture. Drain thoroughly and set aside.

    Make the Roux: In the same pot, melt the unsalted butter over medium heat. Once melted, add the all-purpose flour and whisk continuously for about 1-2 minutes until the mixture becomes bubbly and lightly golden, making sure to avoid any burning.

      Create the Cheese Sauce: Gradually pour in the whole milk while whisking constantly to ensure a smooth mixture without lumps. Continue to cook and stir for 5-7 minutes, allowing the sauce to thicken to a creamy consistency.

        Flavor the Sauce: Add the mustard powder, garlic powder, onion powder, and optional cayenne pepper, along with salt and freshly cracked black pepper to taste. Stir thoroughly to incorporate all the flavors.

          Add the Cheeses: Lower the heat to a gentle simmer and mix in the shredded sharp cheddar and mozzarella cheese. Stir until the cheese is completely melted and the sauce is smooth and creamy.

            Combine Pasta and Sauce: Gently fold the cooked macaroni into the cheese sauce, mixing well to ensure every piece of pasta is fully coated in the luscious cheese mixture.
