Ingredients

4 cups day-old bread, cubed (preferably brioche or challah for a rich flavor)

2 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp work best for a tart contrast)

4 large eggs

1 cup whole milk

1/2 cup heavy cream

1/2 cup brown sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional for added crunch)

2 tablespoons unsalted butter, melted

Maple syrup (for serving)

Instructions

Prep the Muffin Pan: Preheat your oven to 350°F (175°C). Generously grease a 12-cup muffin tin with non-stick spray or softened butter to ensure easy removal of the muffins later.

Prepare the Bread and Apples: In a large mixing bowl, combine the cubed bread with the diced apples. If you’re including nuts for an extra layer of texture, fold them in at this stage. Set this mixture aside while you prepare the custard.

Make the Custard Mixture: In a separate bowl, whisk the eggs until frothy. Add the whole milk, heavy cream, brown sugar, vanilla extract, ground cinnamon, nutmeg, and salt. Whisk the mixture thoroughly until all ingredients are well combined and the sugar is dissolved.

Combine Ingredients: Carefully pour the custard mixture over the bread and apple mixture. Using a spatula or wooden spoon, gently fold the ingredients together until all pieces of bread are evenly coated in the custard. Let the mixture sit for about 10-15 minutes, allowing the bread to soak up the custard for optimal flavor and texture.

Fill the Muffin Cups: Once soaked, use a spoon or an ice cream scoop to evenly distribute the mixture into the prepared muffin cups. Fill each cup approximately three-quarters full to allow for rising during baking.

Add Butter: Drizzle the melted butter over the tops of the muffins. This will enhance the richness and promote a beautiful golden color as they bake.

Bake: Position the muffin tin in the preheated oven and bake for 25-30 minutes, or until the muffins are puffed up and golden brown on top. To check for doneness, insert a toothpick into the center of a muffin; it should come out clean.

Cool and Serve: Let the muffins cool in the pan for about 5 minutes, then gently transfer them to a wire rack to cool slightly before serving. Enjoy them warm, drizzled with maple syrup for a delightful sweetness.
