1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1/2 bell pepper (any color), finely chopped

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional for heat)

Salt and pepper to taste

1/2 cup frozen peas

1/4 cup fresh cilantro or parsley, chopped

1 egg, beaten (for egg wash)

Make the Dough: In a large mixing bowl, combine the flour and salt, whisking until blended. Add the chilled, diced butter into the flour mixture.
