Ingredients

1 cup pure pumpkin puree

1/2 cup unsalted butter

1/2 cup brown sugar, packed

1 teaspoon vanilla extract

1/2 teaspoon salt

1 1/4 cups all-purpose flour

1 teaspoon ground cinnamon

1 tablespoon pumpkin pie spice

3 large eggs

1 cup granulated sugar (for coating)

1/2 teaspoon ground cinnamon (for coating)

Optional: melted chocolate or caramel sauce for dipping

Instructions

Preheat the Oven: Set your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.

Make the Dough: In a medium saucepan over medium heat, combine the pumpkin puree, unsalted butter, brown sugar, vanilla extract, and salt. Stir continuously until the butter has melted and the mixture is fully combined and smooth, around 2-3 minutes.

Add the Dry Ingredients: Remove the saucepan from the heat and gradually stir in the all-purpose flour, ground cinnamon, and pumpkin pie spice. Keep stirring until a cohesive dough forms that pulls away from the sides of the pan, about 1-2 minutes.

Incorporate the Eggs: Allow the dough to cool for a few minutes. Gradually add the eggs one at a time, mixing well after each addition until the dough is glossy and smooth.

Pipe the Churros: Fill a piping bag fitted with a star-shaped tip with the dough. Pipe churro shapes that are about 5 inches long onto the prepared baking sheet, leaving space between each one for expansion.

Bake the Churros: Place the baking sheet in the preheated oven and bake for 15-18 minutes, or until the churros are golden and have set.

Prepare the Coating: While the churros are baking, combine the granulated sugar and ground cinnamon in a shallow dish, stirring to mix well.

Coat the Churros: Once baked, remove the churros from the oven and let them cool for 1-2 minutes. Roll each churro in the cinnamon-sugar mixture until they are completely coated.

Serve: Serve warm with a side of melted chocolate or caramel sauce for dipping. Enjoy your delightful fall treat!
