1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

8 oz mushrooms, sliced

4 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded (plus extra for topping)

1/2 cup grated Parmesan cheese

1 egg, beaten

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

2 cups marinara sauce

Fresh basil leaves, for garnish

Instructions
 

Preheat the oven: Begin by preheating your oven to 375°F (190°C) to ensure it's at the right temperature for baking.

    Cook the lasagna noodles: In a large pot, bring salted water to a boil. Carefully add the lasagna noodles and cook according to the package instructions until they are al dente. Once cooked, drain the noodles and lay them flat on a clean kitchen towel or parchment paper to prevent them from sticking together.

      Sauté the vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until it becomes translucent, which should take about 3-4 minutes. Next, add the minced garlic, stirring for another minute until fragrant. Incorporate the sliced mushrooms into the skillet and sauté until they soften, approximately 5 minutes. Finally, mix in the chopped spinach, cooking until it wilts. Once done, remove the skillet from the heat and allow the mixture to cool slightly.

        Prepare the filling: In a mixing bowl, combine the ricotta cheese, 1 cup of the shredded mozzarella cheese, grated Parmesan cheese, beaten egg, dried oregano, salt, and black pepper.
