1 lb ground beef (80% lean)

1 tablespoon olive oil

2 cloves garlic, minced

1-inch piece of ginger, minced

1 small onion, finely chopped

1 bell pepper, finely chopped (any color)

1 cup mushrooms, finely chopped

1/4 cup soy sauce (or tamari for gluten-free)

2 tablespoons hoisin sauce

1 tablespoon sriracha (adjust to your spice preference)

1 tablespoon rice vinegar

1 cup peach preserves

1 tablespoon lime juice

Salt and black pepper to taste

1 head of butter or romaine lettuce, leaves separated and washed

Optional toppings: chopped green onions, fresh cilantro, crushed peanuts

Instructions
 

Prepare the Peach Glaze: In a small saucepan, combine the peach preserves, lime juice, soy sauce, and sriracha over medium heat. Stir the mixture continuously until it’s smooth and warmed through. Once heated, reduce the heat to low to keep it warm.

    Cook the Beef Filling: In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and ginger, sautéing them for about 30 seconds until they become fragrant.

      Add Vegetables: Stir in the finely chopped onions and bell peppers. Cook them for approximately 3-4 minutes until they soften. Next, add the chopped mushrooms and continue cooking for another 2-3 minutes until they release their moisture and soften.

        Brown the Beef: Add the ground beef to the skillet, using a spatula to break it up as it cooks. Brown the beef for about 5-7 minutes until it is fully cooked. If there’s any excess fat, draining it at this stage is recommended.
