1 medium butternut squash, peeled and cubed (about 4 cups)

2 cups ricotta cheese

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

2 cups fresh spinach (or kale), roughly chopped

12 lasagna noodles (oven-ready or regular)

2 cloves garlic, minced

1 tablespoon olive oil, plus extra for greasing

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper, to taste

1/2 teaspoon nutmeg (optional)

1 cup marinara sauce (store-bought or homemade)

Prepare the Squash: Preheat your oven to 400°F (200°C). In a large bowl, toss the cubed butternut squash with olive oil, salt, pepper, and nutmeg (if using). Spread the seasoned squash in a single layer on a baking sheet lined with parchment paper. Roast in the oven for 25-30 minutes, or until the squash is tender and easy to pierce with a fork.

    Make the Spinach Mixture: While the squash is roasting, heat a drizzle of olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant. Then, add the chopped spinach and cook until it wilts, stirring often (about 2-3 minutes). Season with salt and pepper, then remove from heat and let the mixture cool slightly.

      Blend the Squash: Once the butternut squash is roasted and has cooled for a few minutes, transfer it to a blender or food processor. Blend until smooth, adding a splash of water if needed to achieve a creamy consistency. Stir in the dried basil and oregano for an enhanced flavor profile.

        Prepare the Cheese Mixture: In a medium mixing bowl, combine the ricotta cheese, half of the grated Parmesan cheese, the sautéed spinach, and a pinch of salt and pepper. Mix thoroughly until well combined and creamy.

          Assemble the Lasagna: Grease a 9x13 inch baking dish with a bit of olive oil. Begin by spreading a thin layer of marinara sauce on the bottom of the dish. Place 4 lasagna noodles on top. Carefully spread 1/3 of the ricotta cheese mixture over the noodles, followed by 1/3 of the butternut squash puree. Sprinkle a layer of shredded mozzarella cheese on top. Repeat the layering process twice more (noodles, ricotta mixture, squash puree, mozzarella). For the final layer, top with the remaining 4 noodles, a generous layer of marinara sauce, and the rest of the mozzarella and Parmesan cheeses.

            Bake the Lasagna: Cover the baking dish tightly with aluminum foil and place it in the preheated oven. Bake for 25 minutes. After 25 minutes, carefully remove the foil and continue baking for an additional 15 minutes, or until the cheese is bubbling and golden brown on top.

              Cool and Serve: Once baked, remove the lasagna from the oven and allow it to cool for about 10-15 minutes. This cooling time helps the layers set, making it easier to slice cleanly. Cut into portions, serve warm, and enjoy this comforting, hearty dish!
