Caprese Pasta Salad with Balsamic

8 oz (about 2 cups) pasta (fusilli or penne recommended)

1 ½ cups cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), drained and halved

1 cup fresh basil leaves, roughly torn

½ cup extra virgin olive oil

¼ cup balsamic vinegar

1 clove garlic, finely minced

1 teaspoon dried oregano

Salt and freshly cracked black pepper, to taste

Optional: ¼ cup grated Parmesan cheese for a flavorful garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook it according to the package instructions until al dente. Once cooked, drain the pasta and rinse it under cold running water to halt the cooking process. Set the pasta aside in a large mixing bowl to cool slightly.

    Prepare the Dressing: In a small mixing bowl, whisk together the olive oil, balsamic vinegar, minced garlic, dried oregano, and a generous pinch of salt and freshly cracked pepper. Whisk until the mixture is well combined and slightly emulsified.

      Combine the Ingredients: To the cooled pasta in the mixing bowl, add the halved cherry tomatoes, mozzarella balls, and torn basil leaves.

        Dress the Salad: Pour the prepared balsamic dressing over the pasta salad mixture. Gently toss all ingredients together until everything is evenly coated with the dressing.

          Chill the Salad: Allow the salad to rest for 15 to 30 minutes at room temperature. This will give the flavors a chance to meld beautifully, enhancing the overall taste of the salad.
