Ingredients

2 large sweet potatoes, peeled and cut into 1-inch cubes

2 medium onions, sliced thinly into rings

2 tablespoons olive oil

2 tablespoons unsalted butter

1/2 cup heavy cream (substitute with milk for a lighter option)

Salt, to taste

Black pepper, to taste

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

A pinch of nutmeg (optional, for added warmth)

Chopped fresh chives or parsley for garnish

Instructions

Cook the Sweet Potatoes:

    - In a large pot, add the cubed sweet potatoes and cover them with water. Season the water with a pinch of salt.

      - Bring the pot to a rolling boil, then reduce the heat to a gentle simmer. Cook for about 15-20 minutes, or until the sweet potatoes are tender enough to be pierced easily with a fork.

        - Once cooked, drain the sweet potatoes and set them aside to cool slightly.

          Caramelize the Onions:

            - In a large skillet, combine the olive oil and butter over medium heat.

              - Once the butter has melted, add the sliced onions to the skillet. Sauté the onions for about 10 minutes, stirring occasionally until they start to soften and turn translucent.

                - Reduce the heat to low and continue to cook the onions for an additional 20-25 minutes, stirring frequently. The onions should gradually caramelize, becoming golden brown and deeply flavorful. If necessary, add a splash of water or a bit more olive oil to prevent sticking.

                  Mash the Sweet Potatoes:

                    - In a large mixing bowl, combine the drained sweet potatoes with the caramelized onions.

                      - Pour in the heavy cream, and add salt, black pepper, thyme, and nutmeg (if using).

                        - Using a potato masher or a fork, mash the mixture until it achieves a smooth and creamy consistency. Taste and adjust the seasoning as needed.

                          Serve:

                            - Transfer the delicious sweet potato and onion mash to a serving dish.

                              - Garnish with a sprinkle of chopped fresh chives or parsley for a burst of color and flavor.

                                Enjoy!

                                  - Serve the mash warm as a delightful side dish, perfect alongside your favorite proteins, or enjoy it as a comforting vegetarian main course.
