1 medium head of cauliflower (or 4 cups pre-packaged cauliflower rice)

2 tablespoons olive oil (or optional sesame oil for a more authentic Asian flavor)

1 cup mixed bell peppers, diced (including red, yellow, and green for a colorful presentation)

1 cup snap peas, trimmed

1 medium carrot, julienned

3 green onions, chopped (whites and greens separated)

3 cloves garlic, minced

1 inch piece of ginger, grated

2 tablespoons soy sauce (or tamari for a gluten-free option)

1 tablespoon oyster sauce (optional; a vegetarian version can be used)

1 teaspoon sesame seeds (for garnish)

Salt and pepper, to taste

Fresh cilantro for garnish (optional but recommended)

Prepare the Cauliflower: If you’re starting with a whole head of cauliflower, remove the leaves and core, then break it into smaller florets. Using a food processor, pulse the florets until they resemble the texture of rice grains. If using pre-packaged cauliflower rice, you can skip this step altogether.

    Heat the Oil: In a large skillet or wok, add the olive oil (or sesame oil) and heat it over medium-high heat. Wait until the oil is hot but not smoking — this is crucial for a proper stir-fry.

      Sauté the Aromatics: Quickly add the minced garlic and grated ginger to the hot oil, stirring for about 30 seconds until fragrant, being careful not to let them burn.

        Add the Vegetables: Immediately add the diced bell peppers, snap peas, and julienned carrot to the pan. Sauté these for approximately 3-4 minutes, until the vegetables are tender yet still retain their vibrant colors.
