Cheesy Beef Nachos

1 lb ground beef

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning (about 1 ounce)

1 cup beef broth

1 bag (12 oz) tortilla chips

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 jalapeño, sliced (optional)

1 cup diced tomatoes (fresh or canned)

1 cup black beans, drained and rinsed

1 avocado, diced

½ cup sour cream

¼ cup fresh cilantro, chopped

Lime wedges, for serving

Cook the Beef: In a large skillet set over medium heat, heat the olive oil until shimmering. Add the finely chopped onion and minced garlic, sautéing for about 3-4 minutes until the onion is translucent and fragrant.

    Brown the Meat: Increase the heat to medium-high and add the ground beef to the skillet. Break it apart with a wooden spoon and cook for 5-7 minutes, stirring frequently, until the beef is fully browned and cooked through. Season with salt and pepper to taste.

      Add Seasonings: Sprinkle the taco seasoning evenly over the browned beef and pour in the beef broth. Stir well to combine, then bring the mixture to a gentle simmer. Allow it to simmer for about 5-6 minutes, or until the sauce thickens slightly. Remove from heat and set aside.

        Prepare the Nachos: Preheat your oven to 400°F (200°C). On a large baking sheet, arrange half of the tortilla chips in a single, even layer. Spoon half of the beef mixture generously over the chips. Follow with half of the diced tomatoes, black beans, jalapeños (if using), and half of the cheddar and Monterey Jack cheeses.

          Layer Again: Add another layer by repeating the process with the remaining tortilla chips, beef mixture, tomatoes, black beans, jalapeños, and cheeses on top.
