1 pre-made pie crust (9-inch)

2 tablespoons olive oil

1 cup mushrooms, sliced (either cremini or button)

2 cups fresh spinach, roughly chopped

1 small onion, finely diced

3 large eggs

1 cup heavy cream

1 cup shredded cheese (cheddar or Gruyère work wonderfully)

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon nutmeg (optional for a warm flavor)

Fresh parsley for garnish (optional)

Preheat the Oven: Start by preheating your oven to 375°F (190°C) to ensure it's ready for baking the quiche.

    Sauté the Vegetables: In a large skillet over medium heat, pour in the olive oil. Once the oil is shimmering, add the diced onion. Sauté for about 3-4 minutes or until the onion becomes translucent. Next, stir in the sliced mushrooms and continue to cook for 5-7 minutes until they turn golden brown and release their juices. Finally, add the chopped spinach to the skillet and stir until it wilts, which will take about 2 minutes. Season the vegetable mixture with a pinch of salt, black pepper, garlic powder, and nutmeg (if desired) for enhanced flavor.

      Prepare the Egg Mixture: In a medium mixing bowl, whisk together the eggs and heavy cream until the mixture is smooth and well combined. Fold in half of the shredded cheese, reserving the other half for topping. Taste the mixture and adjust seasoning with additional salt and pepper if needed.
