Ingredients

4 large russet potatoes

1 cup shredded sharp cheddar cheese

1/2 cup cooked bacon, crumbled

1/4 cup sour cream

1/4 cup green onions, finely chopped

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and freshly ground black pepper, to taste

Olive oil, for brushing

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Set your oven to preheat at 400°F (200°C) to ensure it's hot and ready for the potatoes.

Prepare the Potatoes: Rinse the russet potatoes thoroughly under cool running water to remove any dirt. Use a paper towel to pat them dry completely. Using a fork, prick each potato several times to create steam vents that will help them bake evenly.

Bake Potatoes: Arrange the potatoes directly on the oven rack or on a lined baking sheet. Bake for 45-60 minutes, or until the skins are crispy and the insides feel soft when pierced with a fork. Remember, baking times can vary depending on the size of the potatoes. Once done, allow them to cool for a few minutes before handling.

Scoop the Flesh: After they've cooled enough to handle, slice each potato in half lengthwise. Use a spoon to gently scoop out the potato flesh, leaving about 1/4 inch along the skin to maintain structure. Transfer the scooped flesh into a mixing bowl.

Mix the Filling: To the bowl containing the potato flesh, add shredded cheddar cheese, crumbled bacon, sour cream, chopped green onions, garlic powder, onion powder, and season with salt and freshly ground black pepper. Stir the mixture vigorously until all ingredients are well combined and creamy.

Stuff the Skins: Lightly brush both sides of the potato skins with olive oil to enhance crispiness. Generously fill each potato skin with the cheesy potato filling, ensuring they are well-packed.

Second Baking: Arrange the stuffed potato skins back on the baking sheet. Return them to the oven and bake for an additional 10-15 minutes at 400°F (200°C), or until the cheese is bubbling and golden brown.

Serve: Carefully remove from the oven and allow to cool for a minute or two. Garnish with freshly chopped parsley and additional green onions if desired. Serve hot, accompanied by extra sour cream for dipping.
