Ingredients

1 lb ground turkey

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 can (15 oz) chili beans, drained and rinsed

1/2 cup diced onion

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

1/2 tsp smoked paprika

Salt and pepper to taste

8 small flour tortillas (6 inches)

1 tbsp olive oil, for cooking

Sour cream, for serving

Fresh cilantro, for garnish (optional)

Jalapeño slices, for garnish (optional)

Instructions

Cook the Turkey: Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté it for about 2-3 minutes until it becomes translucent. Next, introduce the minced garlic and continue cooking for an additional minute until fragrant.

Season & Stir: Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until the turkey is browned and fully cooked through, approximately 5-7 minutes. Incorporate the ground cumin, chili powder, smoked paprika, and season to taste with salt and pepper. Stir well to ensure the turkey is evenly coated in spices.

Mix in the Beans and Cheese: Once the turkey is cooked, fold in the drained chili beans along with the shredded cheddar and Monterey Jack cheeses. Cook for another 2-3 minutes, stirring occasionally, until the cheese has melted and all ingredients are well blended.

Assemble the Quesadilla Bites: On a clean surface, lay out four tortillas. Spoon the turkey mixture onto one half of each tortilla. Fold the other half over to form a half-moon shape, pressing down gently to seal.

Cook the Quesadilla Bites: Wipe the skillet clean and return it to medium heat. If needed, lightly grease it with more olive oil. Place two folded quesadillas in the skillet (or cook them in batches) and fry for 3-4 minutes on each side until they are golden brown and crispy. Once cooked, remove them from the skillet and let them cool slightly before slicing.

Cut & Serve: Use a sharp knife or a pizza cutter to slice each quesadilla into bite-sized pieces. Serve them warm alongside a dollop of sour cream, jalapeño slices, and, if desired, a sprinkle of fresh cilantro on top for garnish.

Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 4 (as an appetizer; can be adjusted as needed)

                - Presentation Tips: Arrange the cut quesadilla bites on a serving platter, accompanied by a small bowl of sour cream in the center. Garnish the platter with fresh cilantro and jalapeño slices for a vibrant touch.
