2 cups rotisserie chicken, shredded

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

2 cups egg noodles

Salt and freshly ground black pepper to taste

Fresh parsley, finely chopped (for garnish)

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-5 minutes, or until it becomes translucent and fragrant. Next, stir in the minced garlic, sliced carrots, and celery. Cook for an additional 5 minutes, stirring occasionally, until the vegetables start to soften.

    Add Broth and Chicken: Carefully pour in the low-sodium chicken broth and increase the heat to bring the mixture to a rolling boil. Once boiling, add the shredded rotisserie chicken, followed by the dried thyme, dried oregano, and bay leaf. Season the broth with salt and freshly ground black pepper to taste.
