Ingredients

8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

2 tablespoons unsalted butter

Salt and pepper, to taste

1 teaspoon Italian seasoning

Optional garnish: fresh parsley, chopped

Optional: additional Parmesan for serving

Instructions

Cook the Fettuccine: In a large pot, bring salted water to a rolling boil. Add the fettuccine and cook according to the package instructions until al dente, usually about 8-10 minutes. Once done, drain the pasta, reserving about 1 cup of the pasta water for later use. Set the drained pasta aside.

Sauté the Shrimp: In a large skillet, heat the olive oil over medium-high heat. Carefully add the shrimp and season with salt, pepper, and Italian seasoning. Sauté the shrimp for approximately 2-3 minutes on each side, or until they turn a beautiful pink and opaque. Once cooked, remove the shrimp from the skillet and set aside on a plate.

Prepare the Alfredo Sauce: Using the same skillet, reduce the heat to medium and add the butter along with the minced garlic. Sauté for about 1 minute, stirring frequently, until the garlic becomes fragrant but is not browned. Gradually pour in the heavy cream and bring the mixture to a gentle simmer.

Incorporate the Cheese: Slowly whisk in the freshly grated Parmesan cheese, stirring continuously until the cheese is fully melted and the sauce becomes rich and creamy. If the sauce appears too thick, gradually add some of the reserved pasta water until you reach your desired consistency.

Combine Pasta and Shrimp: Add the drained fettuccine and the cooked shrimp back into the skillet. Gently toss everything together until the pasta is thoroughly coated with the creamy Alfredo sauce. Taste the dish and adjust the seasoning with additional salt and pepper if necessary.

Serve: Transfer the creamy shrimp Alfredo onto serving plates. Garnish with chopped fresh parsley for a pop of color and additional grated Parmesan cheese if desired. Enjoy your exquisite Creamy Shrimp Alfredo Delight!
