Ingredients

1 cup all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon salt

5 large eggs, separated

1 cup granulated sugar, divided

1 teaspoon vanilla extract

½ cup whole milk

1 (14 oz) can sweetened condensed milk

1 (12 oz) can evaporated milk

1 cup heavy cream

Fresh fruit (such as strawberries or peaches) for topping (optional)

Ground cinnamon for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare a 9x13 inch baking dish by greasing it thoroughly with butter or non-stick cooking spray to prevent sticking.

Combine Dry Ingredients: In a medium-sized mixing bowl, whisk together the all-purpose flour, baking powder, and salt until evenly blended. Set this bowl aside for later use.

Beat Egg Yolks: In a large mixing bowl, beat the egg yolks and ¾ cup of the granulated sugar using an electric mixer on medium speed. Blend this mixture until it becomes light and fluffy. Add the vanilla extract, mixing well until fully incorporated.

Incorporate Dry Ingredients and Milk: Gradually mix the reserved dry ingredients into the egg yolk mixture, stirring gently until just combined. Carefully pour in the whole milk and continue stirring until the batter achieves a smooth consistency without lumps.

Whip Egg Whites: In a separate clean and dry bowl, use the electric mixer to beat the egg whites on medium speed until soft peaks begin to form. Gradually add the remaining ¼ cup of sugar while continuing to beat the egg whites until they reach firm peaks.

Fold Mixtures Together: Using a spatula, gently fold the fluffy egg whites into the egg yolk batter. Do this in increments, taking care to fold without deflating the egg whites, ensuring a light and airy texture throughout.

Bake the Cake: Carefully pour the batter into the prepared baking dish, smoothing the top with a spatula. Place the dish in the preheated oven and bake for about 25-30 minutes. The cake is done when a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for at least 10 minutes before proceeding.

Prepare Creamy Milk Mixture: In a large mixing bowl, combine the sweetened condensed milk, evaporated milk, and heavy cream. Whisk the mixture vigorously until all the ingredients are well blended and smooth.

Soak the Cake: Once the cake has completely cooled, use a fork or skewer to poke small holes evenly across the surface of the cake. Slowly and evenly pour the creamy milk mixture over the cake, allowing it to soak into the holes. Cover the cake with plastic wrap and refrigerate for at least 4 hours, but preferably overnight, to fully absorb the flavors.

Serve the Cake: Just before serving, whip the remaining heavy cream until soft peaks form. If desired, you can add a sprinkle of sugar to taste. Spread the whipped cream generously over the soaked cake. For an attractive finish, top with slices of fresh fruit and a light dusting of ground cinnamon as desired. Slice into servings and indulge!
