Ingredients

8 oz rice noodles

1 cup cooked chicken breast, shredded

1 cup cucumber, julienned

1 cup carrots, julienned

1 red bell pepper, thinly sliced

2 green onions, chopped

1/4 cup fresh cilantro, chopped

1/4 cup crushed peanuts (optional, for garnish)

For the Sauce:

3 tablespoons peanut butter

2 tablespoons soy sauce

2 tablespoons lime juice

1 tablespoon honey or maple syrup

1 tablespoon sesame oil

1-2 teaspoons Sriracha (adjust to your spice preference)

1 clove garlic, minced

1 teaspoon fresh ginger, grated

Instructions

Cook the Noodles: Bring a generous pot of water to a rolling boil. Carefully add the rice noodles and cook them according to the package instructions until they reach an al dente texture. Once done, drain the noodles and rinse them under cold water to halt the cooking process. Set them aside to cool completely.

Prepare the Sauce: In a medium-sized bowl, combine the peanut butter, soy sauce, lime juice, honey or maple syrup, sesame oil, Sriracha, minced garlic, and grated ginger. Whisk everything together until the mixture is smooth and creamy. If the sauce is thicker than desired, stir in a splash of warm water until you achieve the preferred consistency.

Combine Ingredients: In a large mixing bowl, add the cooled noodles, shredded chicken, julienned cucumber, carrots, thinly sliced red bell pepper, chopped green onions, and fresh cilantro. Gently toss these ingredients together to ensure they are evenly distributed.

Dress the Salad: Drizzle the prepared sauce over the noodle and vegetable mixture. Using tongs or your hands, toss gently to coat every ingredient thoroughly with the delicious sauce.

Chill: Cover the mixing bowl with plastic wrap or transfer the mixture to an airtight container. Refrigerate for at least 30 minutes. This chilling period allows the vibrant flavors to meld together and offers a refreshing cold dish.

Serve: After chilling, give the salad another gentle toss before serving. If you desire, sprinkle with crushed peanuts on top for added texture and flavor. Enjoy your blissfully refreshing Thai chicken noodle dish cold!
