2 tablespoons extra virgin olive oil

1 large onion, finely diced

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 red bell pepper, diced

2 medium sweet potatoes, peeled and cut into ½-inch cubes

1 can (15 oz) chickpeas, thoroughly drained and rinsed

1 can (14 oz) diced tomatoes, with juice

4 cups vegetable broth

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon turmeric powder

¼ teaspoon cayenne pepper (optional, adjust for desired heat)

Salt and black pepper, to taste

2 cups spinach or kale, chopped

Juice of 1 fresh lemon

Fresh cilantro or parsley, finely chopped, for garnish

Instructions
 

Heat the Oil: In a large pot or Dutch oven, warm the olive oil over medium heat. Once shimmering, add the diced onion and sauté for about 5 minutes, or until the onion is soft and translucent.

    Add Aromatics: Mix in the minced garlic and freshly grated ginger. Cook for an additional 1-2 minutes, stirring frequently, until the mixture is aromatic and the garlic is lightly golden.

      Incorporate the Vegetables: Add the diced red bell pepper and cubed sweet potatoes to the pot. Sauté for approximately 5 minutes, allowing the vegetables to soften slightly, while stirring occasionally.

        Mix in the Chickpeas & Spices: Stir in the drained chickpeas and diced tomatoes along with their juice. Pour in the vegetable broth, then add cumin, smoked paprika, turmeric, cayenne pepper (if using), salt, and black pepper. Mix well until all ingredients are evenly combined.

          Simmer the Stew: Bring the stew to a gentle boil, then lower the heat to a simmer. Cover the pot and let it simmer for 25-30 minutes, or until the sweet potatoes are fork-tender and cooked through.

            Add Greens: Once the sweet potatoes are tender, stir in the chopped spinach or kale. Cook for an additional 2-3 minutes, just until the greens are wilted and vibrant.
