Ingredients

1 cup quinoa, rinsed and drained

2 medium carrots, peeled and diced

2 stalks celery, diced

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (any color), diced

1 medium zucchini, sliced into half-moons

1 can (15 oz) diced tomatoes, with juices included

4 cups vegetable broth (low-sodium recommended)

1 can (15 oz) chickpeas, drained and rinsed

2 teaspoons dried thyme

2 teaspoons dried oregano

1 teaspoon smoked paprika

Salt and pepper, to taste

2 cups fresh spinach, roughly chopped

Fresh parsley, chopped, for garnish (optional)

Instructions

Prep the Vegetables: Begin by preparing your vegetables. Peel and dice the carrots, then dice the celery and onion. Chop the bell pepper and slice the zucchini into half-moons. Finally, mince the garlic and set all your chopped veggies aside.

Combine Ingredients: In a spacious crockpot, layer in the rinsed quinoa first, followed by the carrots, celery, onion, bell pepper, zucchini, and minced garlic. Next, add the diced tomatoes along with their juices, chickpeas, dried thyme, oregano, smoked paprika, and a sprinkle of salt and pepper to enhance the flavors.

Pour Broth: Carefully pour the vegetable broth over the entire mixture in the crockpot. Using a large spoon, stir gently to ensure all ingredients are mixed well and the quinoa is evenly distributed throughout the veggies.

Cook: Secure the lid on the crockpot and set it to cook on low for approximately 6-7 hours, or on high for about 3-4 hours. The stew is done when the vegetables are tender and the quinoa appears fluffy and fully cooked.

Add Spinach: About 30 minutes before you plan to serve, stir in the chopped fresh spinach. Cover the crockpot again, allowing the spinach to wilt nicely into the warm stew.

Final Touches: Once the cooking time is completed, taste the stew and adjust the seasoning with additional salt and pepper as needed. Serve the stew hot, garnished with freshly chopped parsley for a burst of color and flavor if desired.

                - Presentation Tips: Serve the stew in rustic bowls and sprinkle with extra parsley. A drizzle of olive oil on top can add an appealing shine to the dish!
