Ingredients

For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon ground cinnamon

For the cheesecake filling:

16 oz (two 8 oz packages) cream cheese, softened to room temperature

¾ cup granulated sugar

½ cup sour cream

3 large eggs

Zest of 1 large orange

¼ cup freshly squeezed orange juice

½ teaspoon pure vanilla extract

For the cranberry topping:

2 cups fresh or frozen cranberries

½ cup granulated sugar

1 cup water

1 tablespoon cornstarch (optional, for thickening)

1 teaspoon pure vanilla extract

Instructions

Prepare the crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium mixing bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and ground cinnamon. Mix thoroughly until the crumbs are well-coated with the butter.

        - Firmly press this mixture into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 10-12 minutes, or until the crust turns a light golden brown. Once baked, remove it from the oven and set it aside to cool completely.

          Make the cheesecake filling:

            - In a large mixing bowl, use an electric mixer on medium speed to beat the softened cream cheese until it’s smooth and creamy, approximately 2 minutes.

              - Gradually add in the granulated sugar, sour cream, orange zest, fresh orange juice, and vanilla extract. Mix until all ingredients are well incorporated and the mixture is smooth.

                - Next, add the eggs one at a time, mixing on low speed just until combined after each addition. Be careful not to overmix to keep the texture creamy.

                  Bake the cheesecake:

                    - Pour the cheesecake filling over the cooled graham cracker crust in the springform pan. Use a spatula to smooth the top evenly.

                      - Bake in the preheated oven for about 50-60 minutes, or until the center is set but still slightly jiggly (it will firm up as it cools).

                        - After baking, turn off the oven, leaving the cheesecake inside for an additional hour. This helps prevent cracking on the surface as it cools.

                          Prepare the cranberry topping:

                            - In a medium saucepan, combine the cranberries, sugar, water, and vanilla extract. Bring the mixture to a boil over medium heat, then reduce to a simmer. Cook for about 10 minutes, or until the cranberries burst and the mixture thickens slightly.

                              - If you desire a thicker cranberry sauce, dissolve the cornstarch in a small amount of cold water to make a slurry, then stir it into the simmering cranberry mixture. Cook for an additional 2-3 minutes until the sauce reaches your desired thickness.

                                Cool and serve:

                                  - After the cheesecake has cooled for one hour at room temperature, transfer it to the refrigerator and chill for at least 4 hours, preferably overnight for best results.

                                    - Once chilled, spread the cranberry topping evenly over the surface of the cheesecake. Carefully release and remove the sides of the springform pan to reveal your beautiful dessert.

                                      - Slice the cheesecake and serve it chilled. For an elegant touch, garnish each slice with a few whole cranberries and a sprinkle of fresh orange zest.
