12 oz spaghetti or fettuccine

2 ripe avocados, pitted and peeled

2 cloves garlic, minced

1/4 cup fresh basil leaves, packed

1/4 cup fresh lemon juice (approximately 1 large lemon)

1/4 cup extra-virgin olive oil

1/4 cup grated Parmesan cheese (plus more for serving)

Salt and freshly ground black pepper, to taste

Pinch of red pepper flakes (optional, for heat)

Cherry tomatoes, halved (for garnish)

Toasted pine nuts (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring water to a rolling boil and add a generous amount of salt. Add the spaghetti or fettuccine and cook according to the package instructions until al dente, typically around 8-10 minutes. Before draining, reserve 1 cup of the pasta cooking water. Drain the pasta and set it aside.

    Make the Avocado Sauce: In a food processor, place the ripe avocados, minced garlic, basil leaves, lemon juice, and olive oil. Blend on high until the mixture is smooth and creamy. If you desire a lighter sauce, gradually add some of the reserved pasta water while blending until your preferred consistency is reached.

      Combine Pasta and Sauce: In a large mixing bowl, add the freshly cooked pasta. Pour the creamy avocado sauce over the warm pasta. Gently toss to ensure that every strand is coated evenly with the sauce.

        Season It Up: Add the grated Parmesan cheese and stir gently to incorporate.
