2 ripe avocados, pitted and peeled

1/2 cup Greek yogurt (or substitute with sour cream for a richer taste)

1/4 cup fresh parsley, finely chopped

1/4 cup fresh chives, finely chopped

1 garlic clove, minced

1 tablespoon freshly squeezed lemon juice

1 teaspoon onion powder

1 teaspoon dried dill

Salt and pepper to taste

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese (optional)

Olive oil, for drizzling

Fresh arugula or spinach, for garnish

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to the package instructions until it reaches an al dente texture. Once cooked, drain the pasta, making sure to reserve about 1/2 cup of the pasta water for later use. Set the drained pasta aside.

    Prepare the Creamy Avocado Ranch Sauce: In a high-speed blender or food processor, combine the ripe avocados, Greek yogurt, chopped parsley, chopped chives, minced garlic, lemon juice, onion powder, dried dill, plus a pinch of salt and pepper.
