Ingredients

2 cups cooked jasmine or basmati rice

2 cups fresh broccoli florets (blanched)

1 cup shredded sharp cheddar cheese (divided)

1 cup cream of mushroom soup (or homemade creamy mushroom sauce)

1/2 cup sour cream

1/2 cup whole milk

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon salt (adjust to taste)

1/2 teaspoon freshly ground black pepper

1/4 teaspoon red pepper flakes (optional for added spice)

1/4 cup breadcrumbs (for crispy topping)

2 tablespoons olive oil or melted butter

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C) to prepare for baking.

Blanch the Broccoli: Bring a pot of water to a boil, add the fresh broccoli florets, and blanch them for 2-3 minutes until they are bright green and tender yet still crisp. Drain the broccoli and set it aside to cool slightly.

Combine the Base Ingredients: In a large mixing bowl, combine the cooked rice, cream of mushroom soup, sour cream, milk, 3/4 cup of the shredded cheddar cheese, minced garlic, onion powder, garlic powder, salt, black pepper, and red pepper flakes. Stir everything together until the mixture is creamy and well combined.

Incorporate the Broccoli: Carefully fold the blanched broccoli florets into the rice mixture, ensuring that the broccoli is evenly distributed throughout the mixture.

Transfer to Baking Dish: Pour the creamy rice and broccoli mixture into a greased 9x13 inch baking dish, spreading it out evenly with a spatula.

Prepare the Crispy Topping: In a separate small bowl, combine the breadcrumbs with the remaining 1/4 cup of cheddar cheese, grated Parmesan cheese, and olive oil or melted butter. Mix until the breadcrumbs are evenly coated and resemble a wet sand texture.

Assemble the Bake: Evenly sprinkle the breadcrumb mixture over the top of the rice and broccoli in the baking dish, ensuring complete coverage for a delightful crunch.

Bake the Dish: Place the baking dish into the preheated oven and bake for 30-35 minutes, or until the topping turns golden brown and the dish is heated through.

Serve and Enjoy: Once baked, remove the dish from the oven and let it cool for about 5 minutes before serving. This will allow the flavors to meld together beautifully. Serve hot and relish the creamy, cheesy goodness!
