Ingredients

3 cups cooked chicken, shredded or diced

2 cups fresh or frozen corn kernels

1 can (15 oz) creamed corn

1 can (10.5 oz) condensed cream of chicken soup

1 cup sour cream

1 cup shredded cheddar cheese, divided

1 cup crushed tortilla chips

1/2 cup diced green onions (optional)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to ensure it’s hot and ready for baking the casserole.

Mix Ingredients: In a large mixing bowl, meticulously combine the shredded chicken, corn kernels, creamed corn, cream of chicken soup, sour cream, half of the shredded cheddar cheese, and diced green onions (if you're opting to include them). Sprinkle in the garlic powder, onion powder, paprika, salt, and pepper. Use a spatula or wooden spoon to stir this mixture until all ingredients are evenly coated and well mixed.

Prepare Baking Dish: Take a 9x13-inch baking dish and lightly grease it with cooking spray or butter to prevent sticking.

Layer the Casserole: Carefully pour the chicken and corn mixture into the prepared baking dish. Using a spatula, spread the mixture out evenly to create an even layer.

Top with Chips and Cheese: Generously sprinkle the crushed tortilla chips over the top of the casserole. Then, add the remaining shredded cheddar cheese, distributing it evenly for a deliciously cheesy top.

Bake: Place the baking dish in the preheated oven. Bake for 30-35 minutes, or until the top is bubbling and beautifully golden brown, creating a delightful crunch.

Garnish and Serve: After baking, remove the casserole from the oven and allow it to cool for about 5-10 minutes. For a fresh touch, garnish with chopped cilantro if desired. Cut the casserole into squares and serve warm for a hearty meal.

Presentation Tips: Consider serving the casserole directly from the baking dish for a rustic look, or plate individual servings with a sprig of cilantro on top for a vibrant finishing touch. Pair with a side salad for added freshness!
