8 oz penne pasta

5 cups fresh spinach (baby spinach is ideal)

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh basil, chopped (for garnish)

Zest of 1 lemon (optional, for a fresh finish)

Cook the Penne: Begin by bringing a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Once cooked, drain the pasta, but be sure to reserve about ½ cup of the pasta water, as we’ll need it later.

    Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, stirring frequently until the garlic becomes fragrant and lightly golden. Keep a close eye on it to avoid burning.

      Add Spinach: Gradually introduce the fresh spinach to the skillet, stirring continuously for about 3-4 minutes or until the spinach wilts down significantly. If you find the spinach is taking longer to wilt, feel free to add a splash of the reserved pasta water to help it along.
