1 cup canned pumpkin puree (ensure it's not pumpkin pie filling)

1 cup heavy cream

1/2 cup freshly grated Parmesan cheese

2 tablespoons unsalted butter

3 cloves garlic, finely minced

1 teaspoon dried sage or 1 tablespoon fresh sage, finely chopped

1/2 teaspoon ground nutmeg

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

Optional: Toasted pumpkin seeds for an added crunch

Cook the Pasta: Begin by bringing a large pot of salted water to a rolling boil. Add the fettuccine and cook according to the package instructions until al dente. Save 1/2 cup of the pasta water for later use, then drain the pasta and set it aside.

    Prepare the Sauce: In a large skillet over medium heat, melt the unsalted butter until it starts to bubble. Add the finely minced garlic and sauté for 1-2 minutes, stirring often, until fragrant but not browned to prevent bitterness.

      Combine Ingredients: Incorporate the pumpkin puree into the skillet, followed by the heavy cream and dried sage. Stir the mixture and cook for another 2-3 minutes until it is heated through and begins to thicken slightly.
