Creamy Spinach and Mushroom Pasta Bake

300g (10.5 oz) penne pasta

200g (7 oz) fresh spinach, washed and dried

200g (7 oz) button mushrooms, thinly sliced

1 medium onion, finely chopped

3 cloves garlic, minced

300ml (10 fl oz) heavy cream

200ml (7 fl oz) vegetable or chicken broth

100g (3.5 oz) cream cheese, softened at room temperature

100g (3.5 oz) grated parmesan cheese

150g (5.5 oz) mozzarella cheese, shredded

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and freshly cracked black pepper, to taste

2 tablespoons olive oil

1 tablespoon butter

Fresh parsley, chopped, for garnish (optional)

Instructions
 

Preheat the Oven: Set your oven to preheat at 180°C (350°F).

    Cook the Pasta: Boil a large pot of salted water. Add in the penne pasta and cook until al dente according to package directions. Once done, drain the pasta and set aside to cool slightly.

      Sauté the Vegetables: In a spacious skillet, combine olive oil and butter over medium heat. Add the chopped onion and cook for about 2-3 minutes until it becomes translucent. Next, stir in the minced garlic and sliced mushrooms, sautéing for an additional 5 minutes until the mushrooms are soft and golden.

        Incorporate Spinach: Gradually add the fresh spinach to the skillet, stirring until it wilts completely. Season with salt, pepper, oregano, and thyme to enhance the flavor.

          Prepare the Cream Sauce: Lower the heat, then pour in the vegetable or chicken broth, mixing it well. Follow by adding the heavy cream and soften the cream cheese by stirring until it’s smoothly integrated. Allow the mixture to reach a gentle simmer.

            Mix Pasta and Sauce: In a large mixing bowl, combine the drained penne pasta with the creamy spinach and mushroom sauce. Fold in half of the grated parmesan cheese and stir until all the pasta is well coated in the delicious sauce.

              Transfer to Baking Dish: Grease a 9x13 inch (or similar size) baking dish and pour in the pasta mixture, spreading it evenly across the bottom.

                Top with Cheese: Evenly sprinkle the shredded mozzarella cheese and the remaining grated parmesan over the top for a crispy, cheesy finish.
