Creamy Sweet Potato Soup

2 large sweet potatoes (approximately 1.5 lbs), peeled and diced into 1-inch cubes

1 medium onion, finely chopped

2 cloves garlic, minced

1 carrot, diced into small pieces

1 teaspoon fresh ginger, finely grated

4 cups vegetable broth

1 cup full-fat coconut milk (for an extra creamy texture)

2 tablespoons olive oil

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and black pepper, to taste

Fresh cilantro or parsley, chopped, for garnish

Optional: Red pepper flakes, to add spiciness

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion, and sauté for about 5 minutes, or until it becomes translucent and soft. Stir in the minced garlic, grated ginger, and diced carrot. Continue cooking for an additional 2-3 minutes, until the mixture is fragrant and the carrot begins to soften.

    Cook Sweet Potatoes: Add the diced sweet potatoes to the pot and sprinkle the ground cumin and smoked paprika over them. Stir well to ensure that the sweet potatoes are evenly coated with the spices. Allow this mixture to cook for another 2 minutes, stirring occasionally.

      Add Liquid: Carefully pour in the vegetable broth, raising the heat to bring the mixture to a boil. Once boiling, reduce the heat to a gentle simmer and let it cook for about 15-20 minutes, or until the sweet potatoes are tender and easily pierced with a fork.

        Blend Into Creaminess: Using an immersion blender, blend the soup directly in the pot until smooth and creamy. If you don’t have an immersion blender, carefully transfer the mixture in batches to a countertop blender, blending until smooth, and then return it to the pot.

          Finish with Coconut Milk: Once the soup is creamy, stir in the full-fat coconut milk. Return the soup to low heat, warming it through without boiling. Taste and season with salt and pepper to your preference. If desired, kick up the heat with a pinch of red pepper flakes.
