Slow cooking is a transformative technique that allows flavors to meld beautifully, particularly in dishes like risotto. When you cook risotto slowly, each grain of arborio rice absorbs the liquid gradually, creating that signature creamy texture. Ingredients

1 ½ cups Arborio rice

4 cups low-sodium vegetable broth

1 can (15 oz) crushed tomatoes

1 medium yellow onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup fresh basil leaves, chopped

1 tsp dried oregano

1 tsp salt (or to taste)

½ tsp black pepper (or to taste)

2 tbsp olive oil

Optional: Extra basil leaves for garnish

Instructions

Prepare the Base: In a large crockpot, drizzle in the olive oil. Add the finely chopped onion and minced garlic, stirring gently to ensure the onions are well coated with oil.

Add the Rice: Pour in the Arborio rice, then give it a good stir to blend it with the onion and garlic mixture. You may sauté for a few minutes if you like, as this can enhance the rice's flavor, but note that it's an optional step since it will simmer in the next stages.

Incorporate Tomatoes and Broth: Add the crushed tomatoes, vegetable broth, dried oregano, salt, and black pepper into the crockpot. Stir thoroughly to combine all the ingredients evenly.

Slow Cook: Cover the crockpot with its lid and set it to low heat. Let the risotto cook for approximately 2.5 to 3 hours. Stir occasionally to ensure even cooking. The rice should gradually absorb the liquid and transform into a creamy texture.

Finish with Cream and Cheese: Once the risotto is creamy and the rice is cooked al dente, stir in the heavy cream and grated Parmesan cheese. Continue mixing until the cheese has melted and the risotto achieves your preferred level of creaminess.

Add Fresh Basil: Gently fold in the chopped fresh basil, ensuring it is evenly distributed throughout the risotto. Taste and adjust the seasoning with extra salt and pepper if needed.

Serve: Scoop the creamy tomato basil risotto into individual bowls. For a beautiful presentation, garnish with extra fresh basil leaves and a sprinkle of additional grated Parmesan cheese if desired. Enjoy this comforting and flavorful dish!
