Ingredients

12 oz penne pasta

1 lb Italian sausage (choose either mild or spicy based on personal preference)

1 medium onion, diced

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, drained

1 cup baby spinach

1 cup heavy cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper, to taste

2 tbsp olive oil

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) so it’s ready when the pasta bake is assembled.

Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until it reaches al dente texture. Once done, drain the pasta and set it aside.

Brown the Sausage: In a large skillet set over medium heat, pour in the olive oil. When the oil is hot, add the Italian sausage. Use a wooden spoon to break the sausage into smaller pieces. Cook for approximately 5-7 minutes, or until the sausage is browned and thoroughly cooked. Drain any excess grease if needed.

Sauté Onions and Garlic: To the skillet containing the sausage, add the diced onion and minced garlic. Sauté this mixture for about 3-5 minutes, or until the onion becomes translucent and the garlic is fragrant.

Combine Ingredients: Stir in the drained diced tomatoes, baby spinach, and heavy cream. Season with Italian seasoning, salt, and pepper. Let this combination simmer for about 3-4 minutes, just until the spinach wilts down.

Mix in Pasta: Carefully fold the cooked penne pasta into the skillet with the sausage and creamy mixture. Use gentle motions to ensure everything is evenly combined.

Assemble the Bake: Lightly grease a 9x13 inch baking dish with oil or cooking spray. Transfer the pasta mixture into the dish, spreading it out in an even layer.

Add Cheeses: Generously sprinkle the shredded mozzarella and grated Parmesan cheese over the pasta mixture, ensuring even coverage.

Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes. Keep an eye out for the cheese to become bubbly and golden brown at the edges.

Garnish and Serve: Once baked, remove the dish from the oven and allow it to rest for about 5 minutes. For an added touch of freshness, garnish with fresh basil leaves if desired. Serve hot and enjoy this delightful dish!
