Preheat the oven: Start by preheating your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper or a silicone baking mat to prevent the nuggets from sticking.

    Prepare the chicken: In a medium-sized mixing bowl, season the bite-sized chicken pieces with salt and black pepper. Make sure to mix well to ensure even seasoning. Set aside while you prepare the breading stations.

      Set up the dredging stations: Arrange three shallow dishes for your breading process:

        - In the first dish, add the all-purpose flour.

          - In the second dish, whisk together the eggs and Dijon mustard until the mixture is smooth and well combined.

            - In the third dish, mix the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, remaining salt, and black pepper thoroughly to ensure an even distribution of flavors.
