4 boneless, skinless chicken thighs

1 cup buttermilk

2 tablespoons Cajun seasoning

1 teaspoon paprika

1 cup all-purpose flour

1 cup cornmeal

1 teaspoon salt

½ teaspoon black pepper

Vegetable oil, for frying

4 brioche buns

4 tablespoons mayonnaise

4 slices of sharp cheddar cheese

1 cup shredded lettuce

1 medium tomato, sliced

4 pickle slices (optional)

      Prepare the Dredging Station:

        - In a shallow dish, mix the all-purpose flour, cornmeal, salt, and black pepper thoroughly. Set this mixture aside as your dredging station.

          Heat the Oil:

            - In a deep skillet or a Dutch oven, pour in enough vegetable oil to achieve a depth of about 2 inches. Heat the oil over medium heat until it reaches 350°F (175°C). Use a thermometer for accurate measurement.

              Dredge the Chicken:

                - Remove the marinated chicken thighs from the refrigerator. Allow any excess buttermilk to drip off. Then, coat each piece of chicken in the flour and cornmeal mixture, pressing down firmly to ensure an even and thick coating.
