2 cups fresh broccoli florets, chopped

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup Panko breadcrumbs (for extra crunch)

2 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and black pepper, to taste

Olive oil spray or cooking spray

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup and to prevent sticking.

    Prepare the Broccoli: Bring a small pot of water to a rolling boil. Carefully add the broccoli florets and blanch them for about 2 minutes, just until they turn bright green and begin to soften. Immediately drain the broccoli and transfer it to an ice bath (a bowl filled with ice water) to halt the cooking process. Once they are cool, drain again and finely chop the florets.

      Mix the Ingredients: In a large mixing bowl, combine the finely chopped broccoli, shredded cheddar cheese, grated Parmesan cheese, Panko breadcrumbs, beaten eggs, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix all ingredients together thoroughly until the mixture is cohesive enough to hold together when squeezed in your hand.
