Ingredients

2 large yellow onions

1 cup all-purpose flour

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon salt

1/2 teaspoon black pepper

1 cup breadcrumbs (panko preferred for extra crunch)

Oil for frying (vegetable or canola)

Instructions

Prepare the Onions:

    - Begin by peeling the onions and slicing them into 1/4-inch thick rings. Carefully separate the rings and set them aside on a plate.

      Set Up Breading Stations:

        - In the first bowl, whisk together the flour, garlic powder, paprika, cayenne pepper, salt, and black pepper until evenly mixed.

          - In a second bowl, pour in the buttermilk, creating a soaking station.

            - In a third bowl, place the breadcrumbs, ensuring they are ready for coating.

              Bread the Onion Rings:

                - Take an onion ring and first dip it into the flour mixture, making sure it’s fully coated; then shake off any excess flour.

                  - Next, plunge it into the buttermilk, allowing it to soak for a few seconds for better adhesion.

                    - Finally, coat the ring in the breadcrumbs by pressing gently to ensure they stick. Repeat this breading process until all onion rings are nicely coated and ready for frying.

                      Heat the Oil:

                        - In a deep skillet or frying pot, pour enough oil to cover the rings about 2 inches deep. Heat the oil over medium heat. To ensure it’s ready, use a thermometer to check that the temperature reaches approximately 350°F (175°C).

                          Fry the Onion Rings:

                            - Carefully place a few breaded onion rings into the hot oil, ensuring not to overcrowd the pan, which could lower the oil’s temperature. Fry the rings until they turn a lovely golden brown and become crispy, about 2-3 minutes per side.

                              - Once done, use a slotted spoon to lift the cooked onion rings out of the oil and transfer them to a plate lined with paper towels to drain excess oil.

                                Serve and Enjoy:

                                  - Serve the crispy onion rings warm, accompanied by your choice of dipping sauce—options like ranch dressing, ketchup, or a zesty spicy aioli would complement them beautifully!
