1/2 cup unsalted roasted peanuts, coarsely chopped

Juice of 2 fresh limes

3 tablespoons extra virgin olive oil

1 tablespoon honey or agave syrup

1 tablespoon soy sauce

Prepare the Dressing: In a small mixing bowl, combine the juice of 2 limes, 3 tablespoons of extra virgin olive oil, 1 tablespoon of honey or agave syrup, and 1 tablespoon of soy sauce. Add a pinch of salt and freshly cracked black pepper to taste. Whisk the mixture thoroughly until the dressing is well blended and smooth. Set aside to let the flavors meld together.
