Ingredients

12 lasagna noodles

2 cups cooked chicken, shredded (rotisserie chicken works perfectly!)

2 cups ricotta cheese

1 large egg

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and freshly ground black pepper, to taste

2 cups Alfredo sauce (store-bought or homemade)

2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions

Prep the Lasagna Noodles:

    - Begin by cooking the lasagna noodles according to the package instructions until they reach an al dente texture. Drain them thoroughly and place them flat on a clean kitchen towel to prevent any sticking.

      Make the Filling:

        - In a mixing bowl, combine the shredded chicken with ricotta cheese, the egg, garlic powder, Italian seasoning, and season with salt and pepper. Mix everything together until you achieve a uniform, creamy filling.

          Assemble the Rolls:

            - Take one lasagna noodle and generously spread the chicken and ricotta mixture along its length. Roll it up tightly from one end to the other and make sure the seam is facing down. Repeat this process for all the noodles to form your rolls.

              Layer the Crockpot:

                - Lining the bottom of your crockpot, pour in a thin layer of Alfredo sauce to help prevent sticking. Place half of the lasagna rolls in a single layer over the sauce. Spoon half of the remaining Alfredo sauce over the rolls and then evenly sprinkle half of the mozzarella and Parmesan cheese on top.

                  Add More Layers:

                    - Place the remaining lasagna rolls on top, followed by the rest of the Alfredo sauce. Finish by sprinkling the remaining mozzarella and Parmesan cheese over everything.

                      Cook:

                        - Cover the crockpot with its lid and set it to cook on low for 4-5 hours or on high for 2-3 hours. Cook until the cheese is melted and bubbly, and the rolls are heated through.

                          Serve:

                            - Once the cooking time is complete, allow the dish to rest for about 10 minutes to set. Before serving, garnish with a sprinkle of chopped fresh parsley for a touch of color and flavor.

                              Prep Time: 20 minutes | Total Time: 4-5 hours | Servings: 6-8

                                - Presentation Tips: Serve the lasagna rolls directly from the crockpot or transfer to a large serving platter. Consider adding a drizzle of extra Alfredo sauce and a sprinkle of parsley right before serving for a festive look!
