1 medium zucchini, diced

1 red bell pepper, chopped

1 yellow bell pepper, chopped

1 cup butternut squash, diced

1 can (15 oz) chickpeas, drained and rinsed

1 cup vegetable broth

1 can (14 oz) diced tomatoes, with juices

1/2 cup dried apricots, chopped

1/4 cup slivered almonds

2 teaspoons ground cumin

1 teaspoon ground cinnamon

1 teaspoon ground coriander

1 teaspoon smoked paprika

Salt and pepper, to taste

1/4 cup fresh cilantro or parsley, chopped (for garnish)

Cooked couscous or rice (for serving, optional)

Prepare the Ingredients: Start by thoroughly washing your vegetables. Dice the onion and garlic, slice the carrots, and chop the bell peppers and zucchini into bite-sized pieces. Also, dice the butternut squash and chop the dried apricots into small pieces for easy incorporation.
