2 large boneless, skinless chicken breasts

1 cup buttermilk

1 cup all-purpose flour

1 cup panko breadcrumbs

1 teaspoon garlic powder

½ cup buffalo sauce (or adjust to taste)

4 large tortillas (flour or whole wheat)

1 cup shredded lettuce (Romaine or Iceberg)

1 cup cherry tomatoes, halved

½ cup shredded cheddar cheese

¼ cup ranch or blue cheese dressing (optional)

Marinate the Chicken: In a large bowl, immerse the chicken breasts in buttermilk. Make sure they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours, to tenderize and infuse flavor into the chicken.

Then dip the chicken back into the buttermilk briefly before rolling it in the panko breadcrumbs, covering each piece completely for that extra crunch.

        Cook the Chicken: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup. Arrange the breaded chicken on the sheet and lightly spray them with cooking oil for enhanced crispiness. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy. Alternatively, for a pan-fried version, heat oil in a skillet over medium heat and cook the chicken for about 6-7 minutes on each side until golden and fully cooked through.
