1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

2 tablespoons Sriracha sauce (adjust to your spice preference)

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup shredded lettuce (romaine or iceberg)

1 cup diced cucumbers

1/2 cup shredded carrots

1/2 cup chopped red bell pepper

1/4 cup fresh cilantro or parsley, chopped

4 large whole wheat or spinach wraps

1/2 cup ranch or yogurt-based dressing (optional)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper to ensure easy cleanup.

    Prepare the Chickpeas: In a large mixing bowl, combine the drained and rinsed chickpeas with olive oil, Sriracha sauce, garlic powder, smoked paprika, salt, and black pepper. Use a spatula to toss the chickpeas thoroughly, ensuring each one is well coated with the flavorful mixture.

      Roast the Chickpeas: Spread the seasoned chickpeas out in a single layer on the prepared baking sheet. Roast them in the preheated oven for approximately 20-25 minutes, or until they become crispy. Be sure to stir them halfway through to ensure even cooking and browning.

        Prepare the Vegetables: While the chickpeas are roasting, wash and chop your vegetables. In a separate bowl, mix together the shredded lettuce, diced cucumbers, shredded carrots, chopped red bell pepper, and the chopped herbs (cilantro or parsley) until combined.
