Crunchy Tofu Lettuce Wraps

1 block (14 oz) firm tofu, thoroughly drained and pressed

2 tablespoons cornstarch

3 tablespoons vegetable oil

1 red bell pepper, finely diced

1 cup shredded carrots

3 green onions, thinly sliced

1/4 cup fresh cilantro, roughly chopped

2 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 tablespoon sriracha (optional, for a spicy kick)

Butter lettuce leaves (or iceberg lettuce) for wrapping

Sesame seeds, for garnish

Prepare the Tofu: Begin by cutting the pressed tofu into bite-sized cubes, around 1 inch each. Place the tofu cubes into a mixing bowl, then sprinkle the cornstarch over them. Gently toss to ensure each cube is evenly coated with cornstarch, which will help them become crispy when cooked.

    Heat the Oil: In a large non-stick skillet, pour in the vegetable oil and heat it over medium-high heat. Once the oil is shimmering, carefully add the cornstarch-coated tofu cubes in a single layer. Allow the tofu to fry undisturbed for about 5-7 minutes until one side is golden brown and crispy. Use a spatula to turn the tofu cubes and continue frying for another 5-7 minutes or until all sides are beautifully golden and crispy. Once done, remove the crispy tofu from the skillet and set it aside on a plate lined with paper towels to absorb any excess oil.

      Sauté the Veggies: Keeping the same skillet, reduce the heat to medium. Add the diced red bell pepper and shredded carrots. Sauté these vegetables for approximately 3-4 minutes until they begin to soften but still retain a slight crunch.

        Combine Ingredients: Add the crispy tofu back into the skillet with the sautéed vegetables. Pour in the chopped green onions, soy sauce, hoisin sauce, rice vinegar, sesame oil, and sriracha (if opting for spice). Stir everything gently together and cook for an additional 2-3 minutes, allowing the flavors to meld and everything to heat through.

          Assemble the Wraps: To create your wraps, take a fresh lettuce leaf and place a generous scoop of the tofu and vegetable mixture in the center. Top with a sprinkle of fresh cilantro and a dash of sesame seeds for added flavor and crunch.
