2 medium cucumbers, peeled, seeded, and diced into small cubes

2 medium Hatch green chiles, roasted, peeled, and finely chopped

1 small red onion, finely chopped

2 medium ripe tomatoes, diced

1/4 cup fresh cilantro, finely chopped

Juice of 2 fresh limes

1 teaspoon garlic powder

1/2 teaspoon ground cumin

Salt and freshly ground black pepper to taste

Prepare the Ingredients: Start by peeling and seeding the cucumbers. Cut them into small cubes for a pleasant texture. For the Hatch green chiles, roast them over an open flame or under a broiler until the skin is charred and blistered. Once charred, place them in a bowl covered with plastic wrap for about 10 minutes to steam, which makes peeling easier. After peeling, finely chop the chiles.
