Ingredients

2 cups cooked jasmine rice (preferably refrigerated overnight)

1/2 cup fig jam

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup mixed bell peppers, diced (red, yellow, green)

1 cup snap peas, trimmed and chopped

2 large eggs, beaten

3 tablespoons soy sauce

2 tablespoons sesame oil

1 tablespoon olive oil

2 green onions, sliced for garnish

Salt and pepper to taste

Optional: 1/4 cup chopped nuts (such as walnuts or pecans) for an added crunch

Instructions

Prepare Your Ingredients: Begin by ensuring all vegetables are washed, trimmed, and chopped into bite-sized pieces. If utilizing leftover rice, break up any clumps to ensure even frying.

Heat the Oils: In a large skillet or wok, combine the olive oil and sesame oil over medium heat. Allow the oils to heat for about a minute until shimmering.

Sauté the Aromatics: Add the finely chopped onion and minced garlic to the hot oil. Sauté for 2-3 minutes, stirring frequently, until the onion becomes translucent and aromatic, infusing the oil with flavor.

Incorporate the Vegetables: Stir in the diced bell peppers and chopped snap peas. Cook for an additional 4-5 minutes until the vegetables are tender yet retain their vivid colors and crunch.

Create Space for the Eggs: Using a spatula, push the sautéed vegetables to one side of the skillet. In the cleared portion, pour the beaten eggs and scramble them gently, cooking until just set, about 1-2 minutes.

Combine Rice and Fig Jam: Add the prepared jasmine rice to the skillet, followed by the soy sauce and fig jam. Mix everything thoroughly to ensure the rice is evenly coated in the jam and sauce. Cook for another 2-3 minutes, allowing the flavors to meld and the rice to heat through.

Season to Perfection: Taste the fried rice and adjust the seasoning with salt and pepper as desired. For an extra layer of flavor and crunch, sprinkle in the optional chopped nuts, stirring to combine.

Garnish and Serve: Remove the skillet from heat and garnish with sliced green onions. Serve the fried rice hot, either as a delightful main dish or as a charming side that will impress your guests!
