Frozen Coconut Pineapple Pops

1 cup full-fat coconut milk (for optimal creaminess)

1 cup fresh pineapple chunks, plus extra for garnish

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon pure vanilla extract

1/4 teaspoon salt

1/2 cup unsweetened shredded coconut (for coating)

Instructions
 

Begin by adding the coconut milk, fresh pineapple chunks, honey (or maple syrup), vanilla extract, and salt to a high-speed blender. Blend the mixture on high until it's completely smooth and creamy, ensuring there are no visible pineapple chunks remaining.

    Taste the blended mixture and adjust the sweetness to your liking by adding more honey or maple syrup as desired.

      Carefully pour the creamy mixture into your popsicle molds. Be sure to leave a small amount of space at the top of each mold to allow for expansion as the mixture freezes.

        Insert popsicle sticks into each filled mold. If your popsicle molds are flexible, you can let the mixture freeze for about 30 minutes before inserting the sticks. This helps to keep the sticks standing upright.

          Freeze the popsicles for a minimum of 4 to 6 hours, or until they are completely firm and solid.

            Once they are frozen, gently remove the popsicles from the molds. For easier removal, run warm water over the outside of the molds for a few seconds to loosen them.

              In a shallow dish, evenly spread out the unsweetened shredded coconut. Take each popsicle and roll it in the shredded coconut, pressing lightly to ensure the coconut adheres to the surface.

                Serve the popsicles immediately, or if you're not quite ready to enjoy them, place the coated popsicles back into the freezer until you are!
