2 cups fresh or frozen pineapple chunks

1/2 cup coconut milk (you can use canned for a richer flavor or carton for a lighter option)

2 tablespoons honey or agave syrup (feel free to adjust according to your sweetness preference)

1 tablespoon fresh lime juice

Optional: a pinch of sea salt

Optional toppings: shredded coconut, chopped nuts, or a drizzle of melted chocolate

Instructions
 

Blend the Base: In a high-speed blender, combine the pineapple chunks, coconut milk, honey (or agave), lime juice, and sea salt (if using). Blend on high until the mixture is completely smooth and creamy, ensuring there are no pineapple chunks remaining.

    Taste and Adjust: After blending, taste the mixture to check for sweetness and acidity. If desired, adjust by adding more honey or lime juice. Blend for a few additional seconds to incorporate any changes.

      Pour into Molds: Carefully pour the creamy pineapple mixture into popsicle molds, filling them about three-quarters full to allow space for expansion during freezing.

        Insert Sticks: If your popsicle molds come with them, gently insert the popsicle sticks into the center of each filled mold, ensuring they stand upright and are secure.

          Freeze Time: Transfer the molds to the freezer and let them freeze for at least 4 to 6 hours, or until the pops are completely solid.

            Remove from Molds: To release the frozen pineapple pops, run warm water over the outside of the molds for a few seconds to help loosen them. Carefully pull the pops out of the molds, taking care not to break them.

              Add Toppings (Optional): For an indulgent twist, roll the pops in shredded coconut, sprinkle with chopped nuts, or drizzle with melted chocolate for an irresistible finish before serving.
