4 cups of ripe, seedless watermelon, diced

1 tablespoon of freshly squeezed lime juice

2 tablespoons of honey or agave syrup (adjust based on the sweetness of your watermelon)

1 cup of coconut water (or plain water based on your preference)

Optional: Fresh mint leaves for garnish

Optional: A pinch of sea salt to enhance the flavors

Prepare the Watermelon: Begin by cutting the watermelon into small, bite-sized cubes. If you are using a seeded watermelon, make sure to remove all seeds before proceeding.

    Blend the Ingredients: In a blender, add the diced watermelon along with the lime juice, honey (or agave syrup), and coconut water. Blend the mixture on high speed until it reaches a smooth consistency. If you prefer some texture, you can blend it less, leaving a few small chunks of watermelon.

      Conduct a Taste Test: Take a moment to taste the mixture. If you feel it requires a bit more sweetness, stir in additional honey or agave until you reach your desired flavor. For a delightful twist, consider adding a pinch of sea salt, which will elevate the overall taste.

        Fill the Molds: Carefully pour the blended watermelon mixture into popsicle molds, ensuring to leave a small gap at the top of each mold to allow for expansion during freezing.

          Insert the Sticks: If your popsicle molds include sticks, insert them halfway into the mixture. If you are using paper cups, place a popsicle stick in the center of each cup.

            Freeze the Popsicles: Transfer the molds to the freezer and allow them to freeze for a minimum of 4 to 6 hours, or until completely solid.

              Release the Popsicles: Once fully frozen, run the outside of the molds under warm water for a few seconds to help loosen the popsicles. Gently pull them out of the molds and place them on a serving plate.
