Ingredients

2 cups plain Greek yogurt

2 tablespoons honey or maple syrup (adjust to your sweetness preference)

1 teaspoon vanilla extract

1/2 cup strawberries, diced

1/2 cup blueberries

1/2 cup kiwi, diced

1/4 cup unsweetened shredded coconut

1/4 cup mini chocolate chips (optional)

1/4 cup chopped nuts (such as almonds, walnuts, or pistachios) (optional)

Parchment paper for lining

Instructions

Prepare the Yogurt Base: In a medium mixing bowl, combine the plain Greek yogurt, honey (or maple syrup), and vanilla extract. Use a whisk or spoon to stir the mixture until it’s well incorporated and smooth in texture.

Line Your Baking Sheet: Take a large piece of parchment paper and lay it over a baking sheet. Allow the edges of the paper to hang over the sides slightly; this will help you lift the bark out later.

Spread the Yogurt Mixture: Carefully pour the yogurt mixture onto the lined baking sheet. Use a spatula to evenly spread the yogurt into a rectangle shape, aiming for a thickness of approximately 1/4 inch.

Add the Colorful Toppings: Distribute the diced strawberries, blueberries, and kiwi evenly across the yogurt layer. For added crunch and flavor, sprinkle on the unsweetened shredded coconut, mini chocolate chips, and chopped nuts, if using.

Freeze the Yogurt Bark: Place the baking sheet in the freezer. Allow the yogurt bark to freeze for at least 4 hours, or until it is completely solid and firm to the touch.

Break into Irregular Pieces: Once fully frozen, remove the yogurt bark from the freezer. Carefully lift the frozen sheet out of the baking tray by pulling on the edges of the parchment paper. With your hands or a knife, break the yogurt bark into assorted irregular pieces.

Store or Serve: You can enjoy the delicious pieces right away, or store any leftovers in an airtight container in the freezer, where they will keep for up to 2 weeks.
