Ingredients

For the Strawberry Layer:

2 cups fresh strawberries, hulled and sliced

3 tablespoons honey or maple syrup (to taste)

1 tablespoon lemon juice

1 teaspoon vanilla extract

For the Yogurt Layer:

3 cups plain Greek yogurt (or flavored yogurt of your choice)

2 tablespoons honey or agave syrup (adjust based on desired sweetness)

1 teaspoon vanilla extract

For the Crumble Topping:

1 cup rolled oats

½ cup almond flour (or substitute with all-purpose flour)

½ cup brown sugar

1 teaspoon ground cinnamon

¼ cup melted coconut oil (or unsalted butter)

Pinch of salt

Instructions

Prepare the Strawberry Layer:

    - In a medium mixing bowl, combine the sliced strawberries, honey (or maple syrup), lemon juice, and vanilla extract. Gently stir until all strawberries are evenly coated. Allow the mixture to marinate for 10-15 minutes to develop the flavors.

      Blend the Yogurt Layer:

        - In a separate bowl, mix together the Greek yogurt, honey (or agave syrup), and vanilla extract. Whisk until the mixture is smooth and creamy. Taste and adjust sweetness with more honey or syrup if desired.

          Make the Crumble Topping:

            - Preheat your oven to 350°F (175°C). In a mixing bowl, combine the rolled oats, almond flour, brown sugar, ground cinnamon, and a pinch of salt. Drizzle the melted coconut oil over the mixture and stir until it resembles coarse crumbs.

              - Spread the crumble mixture onto a parchment-lined baking sheet in an even layer. Bake for 10-12 minutes, or until the topping is golden brown. Once baked, set aside to cool completely.

                Assemble the Frozen Yogurt Slices:

                  - Line a 9x9 inch (23x23 cm) square baking dish with parchment paper, leaving a bit of an overhang for easy removal. Start by spreading half of the yogurt mixture evenly across the bottom of the dish.

                    - Layer the marinated strawberries over the yogurt base evenly.

                      - Pour the remaining yogurt mixture over the strawberries, smoothing it out with a spatula for an even layer. Finally, sprinkle the cooled crumble topping across the surface.

                        Freeze:

                          - Cover the dish tightly with plastic wrap and place it in the freezer for at least 4 hours, or until fully set.

                            Serve:

                              - When ready to serve, remove the dish from the freezer and let it sit for about 5 minutes to soften slightly. Lift the set layers out using the parchment paper and cut into slices with a sharp knife. Serve immediately for a refreshing and delightful treat!

Prep Time: 20 minutes | Total Time: 4 hours 20 minutes | Servings: 12 slices
