Ingredients

1 lb shrimp, peeled and deveined

1 cup Arborio rice (or substitute with long-grain rice)

4 cups chicken broth (or vegetable broth for a lighter flavor)

4 tablespoons unsalted butter

4 cloves garlic, minced

1 cup freshly grated Parmesan cheese

1 cup frozen peas (optional, for added color and nutrition)

1 teaspoon red pepper flakes (adjust according to your spice preference)

Salt and pepper to taste

Fresh parsley, finely chopped (for garnish)

Juice of 1 lemon

Instructions

Prepare the Shrimp: Rinse the shrimp under cold water and pat dry with paper towels. Season them generously with salt, pepper, and red pepper flakes. Set aside to marinate briefly.

Cook the Rice: In a large skillet or a heavy-bottomed pan, melt 2 tablespoons of butter over medium heat. Add the Arborio rice to the skillet; toast it for 2-3 minutes, stirring frequently, until it turns light golden and fragrant.

Add Garlic: Mix in the minced garlic, allowing it to cook for about 1 minute. Be careful not to let it burn—watch for it to become aromatic.

Incorporate Broth: Gradually pour in the chicken broth, stirring as you do. Bring the mixture to a gentle simmer. Continue to cook for 15-20 minutes, stirring occasionally, until the rice is creamy and has absorbed most of the liquid.

Cook the Shrimp: While the rice is cooking, heat a separate large skillet over medium-high heat and melt the remaining 2 tablespoons of butter. Add the seasoned shrimp to the skillet and sauté them for 2-3 minutes on each side until they are pink and opaque. Once cooked, remove the shrimp from the skillet and set aside.

Combine Flavors: After the rice is tender and creamy, gently fold in the cooked shrimp, optional frozen peas, and grated Parmesan cheese. Stir well until the cheese is melted and all ingredients are harmoniously combined. Taste and adjust the seasoning with additional salt, pepper, and red pepper flakes as desired.

Finish with Lemon: Drizzle the juice of one freshly squeezed lemon over the rice and shrimp mixture. Stir thoroughly to incorporate the bright citrus flavor.

Serve: Transfer the skillet to the table and garnish with a sprinkle of freshly chopped parsley. Serve immediately for a deliciously creamy and garlicky dish that you will love!
